With 18 years catering industry and purchasing experience, left the Greenalls Group to create the Concept One business. Current/Recent projects include:

  • Full quality control management and implementation of computerised costing and specification system for a Surrey based chain of 10 brasseries.
  • Creation of Quality & Food Safety Systems, for large London Catering Butcher, in order to achieve EFSIS accreditation.
  • Creation of all supplier food product specifications for HM Prison Service, now in use in all 133 UK prisons.
  • Full HACCP system for established chain of W1 Italian restaurants.
    Full catering operational support for B G Leisure LTD
  • Full audit and report of catering operations for Yates Brothers Wine Lodges PLC
  • Coordinating and training of new menu concept within Yates Wine lodges PLC
  • Hygiene audits for large oil company.
  • Full catering and operational management system for new pub and restaurant chain.

Brings 18 years experience in catering, project management, assessment and accreditation, most recently with Shell UK. Recent projects include

  • Develoment of concept and menu for new pub restaurant chain.
  • Hygiene & HACCP training.
  • Maintaining quality management & food safety systems for established London wholsale company.


Paul Lake. Software Consultant
Paul is the principal developer of the Concept One software package. Paul has more than 10 years of experience in the IT industry with both software houses and blue chip companies. He now works as Software Consultant with extensive knowlege of PC systems and databases.
